Avocado Cannelloni

  • 1 tablespoon vegetable oil
  • 7 ounces shrimp
  • 3 1/2 ounces turkey
  • 2 tablespoons mayonnaise
  • salt
  • 1 avocado

Directions

    Add the oil to as skillet on medium heat. Add the shrimp and turkey and saute for 3 minutes. Remove from the heat and set aside.

    Once cool, mix with the mayonnaise and a pinch of salt and place into the refrigerator.

    Cut a piece of plastic wrap and place it on top of a cutting board. Thinly slice the avocado, make the slices even and about the same size.

    Place the slices in a row, making them overlap. Cut another piece of plastic wrap and place it over the cannelloni and flip it over. Remove the top plastic wrap.

    Stuff the cannelloni, being careful not to put too much stuffing.

    Roll the cannelloni with the help of the plastic wrap. Once it is rolled, place in the refrigerator for an hour.
