  • 1 c. fresh corn kernels, cooked (or canned)
  • 1/4 c. chopped red pepper
  • 1/4 c. chopped yellow pepper
  • 1/4 c. diced tomato
  • 2 Tbsp. chopped cilantro
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. finely chopped shallots
  • 1/2 jalapeno chile, seeded and minced
  • 1 c. diced, peeled avocado
