- 2 large avocados (about 1 lb. each)
- 2 medium plum tomatoes
- 2 medium oranges
- 1 (16 to 19 oz.) can black beans, rinsed and drained
- 1 Tbsp. chopped cilantro or parsley
- 1 tsp. salt
Directions

1About 30 minutes before serving, peel avocados and discard pits.

2Cut avocados and tomatoes into bite size chunks.

3Cut peel from oranges.

4Cut oranges crosswise into 1/2-inch thick slices. In a bowl, gently toss avocados, tomatoes, orange slices, black beans, cilantro and salt.

5Makes 4 accompaniment servings.
