Ingredients

  • 4 Avocados
  • 1/2 whole Lemon Or Lime (just A Squeeze Of The Juice)
  • 1 cup Cottage Cheese
  • 4 slices Cooked Bacon, Crumbled
  • 2 stalks Green Onion, Chopped
  • 1/2 bunches To 1 Bunch Cilantro, Chopped (optional)
  • 1/4 teaspoons Ground Red (cayenne) Pepper
  • Salt And Pepper, to taste

    Slice the avocados in half, removing the pits.

    Next, make several parallel cuts in the flesh (towards the rind) without cutting through the rind.

    Scoop out diced avocado with a large spoon and transfer to a large non-metal bowl.

    Add a squeeze of lemon or lime juice to prevent the avocado from browning and stir.

    Add cottage cheese, bacon, green onion, and cilantro (if using) to avocado mixture.

    Stir to combine.

    Season with red pepper, salt, and black pepper to taste.

    Chill before serving.

    Note: The amount of each ingredient can easily be adjusted to suit your tastes.

    The cilantro can certainly be omitted if you dont like it, but I find it adds a very yummy complexity to this simple recipe!
