B-Fast Casserole Cake

Ingredients
- 3 whole Medium Potatoes
- 3 whole Eggs
- 8 pieces Ham (or Breakfast Meat)
- 1 cup Cheese

1This recipe can be twisted and prodded until if fits what you and your family like. This is the way that my picky husband likes it.

2This can be made in individual cake tins (see picture) or in a casserole dish. What ever makes you happy, I'm not one to judge.

3Set oven on 400 degrees.

4Cook the potatoes until fork tender (I use the microwave because it's fast ... and easy).

5Coat pan or dish with butter to prevent sticking.

6Layer half the ham on the bottom of the dish.

7Top with half the potatoes.

8Season as desired; don't add too much salt, since the cheese and ham will add to the flavor.

9Sprinkle half the cheese.

10Layer the rest of the ham.

11Layer rest of the potatoes.

12Add a little more seasoning.

13Add the last bit of cheese.

14In a separate bowl, mix the eggs (add a little milk if you'd like) and season as desired.

15Pour egg mixture over the rest of the prepared ingredients.

16Pop in the oven for about 10-15 minutes, depending on how done you like your eggs.

17Note: a little before the eggs are done, I like to turn on the broiler to brown the top and finish cooking the eggs.
