- 2 (17 oz.) cans yams, drained and cut into 1/2-inch slices, or 2 lb. fresh sweet potatoes, sliced and cut
- 2 medium bananas, sliced
- 1/4 c. melted margarine or olive oil
- 1/4 tsp. salt
- 1/4 c. light corn syrup
- 1/4 c. orange juice
- 1/2 c. flaked coconut
Directions

1Alternate layers of yams and bananas in a 1-quart casserole, ending with a layer of yams.

2Stir together salt, corn syrup and orange juice.

3Pour over yams and bananas.

4Cover and bake in preheated 375° oven for 30 minutes.

5Remove from oven, pour off oil and sprinkle casserole with coconut.

6Return to oven for 10 minutes to brown coconut.

7Serves 6.
