  • 2 (17 oz.) cans yams, drained and cut into 1/2-inch slices, or 2 lb. fresh sweet potatoes, sliced and cut
  • 2 medium bananas, sliced
  • 1/4 c. melted margarine or olive oil
  • 1/4 tsp. salt
  • 1/4 c. light corn syrup
  • 1/4 c. orange juice
  • 1/2 c. flaked coconut

Directions

    Alternate layers of yams and bananas in a 1-quart casserole, ending with a layer of yams.

    Stir together salt, corn syrup and orange juice.

    Pour over yams and bananas.

    Cover and bake in preheated 375° oven for 30 minutes.

    Remove from oven, pour off oil and sprinkle casserole with coconut.

    Return to oven for 10 minutes to brown coconut.
