Ingredients

  • 1/2 c. scalded milk
  • 1 cake compressed yeast
  • 1/2 c. flour
  • 2 Tbsp. sugar
  • 1/2 c. butter
  • 6 Tbsp. sugar
  • 1/2 tsp. salt
  • 2 tsp. grated lemon rind
  • 3 eggs, well beaten
  • 1 1/2 c. flour

    Cool scalded milk to lukewarm.

    Add crumbled yeast, 1/2 cup flour and 2 tablespoons sugar.

    Stir until smooth.

    Cover and let rise in a warm place about 1 hour.

    Cream butter, gradually adding 6 tablespoons sugar.

    Beat until light.

    Add salt, lemon rind, eggs, 1 1/2 cups flour and yeast mixture.

    Beat well, about 15 minutes.

    Half fill special molds which are well buttered both on the bottom and on the sides.

    Cover and let rise until doubled in bulk, about 1 hour.

    Cook 40 minutes in a moderate oven (350°).
