Ingredients

  • 1 firm eggplant sliced 1/2 inch thick
  • 1/4 cup EVOO,plus more for brushing
  • salt and pepper
  • 1/4 cup water
  • 1/4 cup tahini
  • 1 clove garlic
  • juice of lg lemon
  • 1 teaspoon hot pepper sauce
  • 1-1/2 cups lightly crushed pita chips
  • One 15.5 ounce can chickpeas,rinsed
  • 1 cup drained hot giardiniera chopped
  • 1/2 english cucumber,cut in 2 inch cubes
  • 1 small red onion,chopped
  • 1/2 c flat leaf parsley

Directions

    Preheat grill or grill pan until hot. Brush eggplant slices with EVOO,grill turning once 5min,salt and pepper. Transfer to cutting board,cool,cut into chunks.

    Using food processor,puree water,tahini,garlic,lemon juice & hot sauce add remaining EVOO.

    Combine all ingredients & toss.
