- 12 corn muffins
- 2 c. mayonnaise (may use lite)
- 1 large green pepper, chopped
- 1 medium onion, chopped
- 1/2 c. chopped celery
- 2 tomatoes, diced
- salt and pepper to taste
- 1/4 lb. fried, drained and broken bacon (optional)
Directions

1In a large bowl, break up corn muffins.

2Add mayonnaise, green pepper, onion and celery.

3Fold in tomatoes.

4Salt and pepper to taste.

5Sprinkle bacon over top of salad, if desired. Refrigerate.
