Bacon-Cheese Pie

Ingredients
- 1 lb. lean bacon, crisply cooked and crumbled
- 1 c. (4 oz.) shredded cheese (sharp)
- 1/2 c. chopped onion
- 1 1/2 c. milk
- 3 eggs, beaten (add to milk)
- 1 c. biscuit mix (homemade; could use Bisquick)
- 1/8 tsp. pepper
Directions

1Heat oven to 400°.

2Grease a 10-inch pie plate.

3Sprinkle bacon, onion and cheese in pie plate.

4In blender or processor, combine remaining ingredients and beat on high about one minute, until smooth.

5Pour into pie plate.

6Bake for 35 to 40 minutes or until knife inserted in center comes out clean.

7Cool 5 minutes. Cut into wedges.

8Serve with salad.
