- 8 to 10 medium potatoes
- 1/2 c. finely chopped onion
- 1 lb. processed American cheese, cubed
- 1 c. mayonnaise
- 1/2 lb. sliced bacon, cooked and crumbled
- chopped, fresh parsley (optional)
Directions

1Peel potatoes and place in saucepan.

2Cover with water and cook until tender, but firm.

3Drain and cube.

4Mix potatoes with onion, cheese and mayonnaise in a bowl.

5Transfer mixture to ungreased 13 x 9-inch baking dish.

6Sprinkle with bacon.

7Cover and bake at 350° for 30 minutes.

8Sprinkle with parsley.
