Bacon & Gorgonzola Pasta

Ingredients

  • pasta, of choice
  • 1 cup cooked, cubed yellow squash
  • 1/2 cup candied walnuts
  • 1 cup fresh spinach
  • 6-7 strips of bacon, cut into bits.
  • 1/3 cup gorgonzola
  • 1/4 cup parmesan
  • 1/4 cup blue cheese
  • Sauce:
  • 4 tablespoons butter
  • 8 sage leaves
  • 1/2 lemon, juiced

    While pasta, squash and bacon cooks, melt butter in a large saute pan and continue cooking until golden brown color appears. Add sage leaves and remove from heat. Add lemon juice and set aside. Drain the pasta, but leaving some cooking water, and gently pour into saute pan, add spinach and return to heat. Add the cheese, squash, bacon, and walnuts toss to coat and serve immediately.
