  • 1 lb bacon cut into 1inch pieces
  • 1 medium onion chopped
  • 1 packages (8 oz) sliced fresh mushrooms
  • 2 tbsp dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3/4 cup milk
  • 12 eggs
  • 1 packages (2 lbs.) frozen hash browns
  • 2 cup shredded cheddar cheese

    Cook Bacon & remove to small bowel.

    Refrigerate.

    Cook onion & mushrooms 4 minutes.

    Storing mustard, salt and pepper.

    Add eggs beat with wire whisk.

    Spray baking pan.

    Spread 1/2 of hash browns in baking dish.

    Spread onion mixture evenly on top.

    Sprinkle with 1cup of cheese and spread remaining hash browns on top.

    Pour egg mixture on top.

    Cover and refrigerate 8 hours.

    Heat oven to 325F.

    Uncover and bake 50 to 60 minutes or until thermometer reads 160F.

    Sprinkle cheese and Bacon then bake 3 to 5 minutes.
