Bacon-Stuffed Potatoes

- 4 large baking potatoes
- vegetable oil
- 1/2 c. chopped shallots
- 2 Tbsp. melted butter
- 1 c. sour cream
- 1/2 c. grated Parmesan cheese (fresh)
- 1 tsp. salt
- 1/2 tsp. pepper
- 8 slices bacon, cooked and crumbled
Directions

1Rub clean potatoes with oil and bake at 400° for 1 hour or until soft.

2Allow potatoes to cool to touch.

3Slice away skin from top of each potato.

4Scoop out pulp, leaving shells intact.

5Saute shallots in butter until tender.

6Add shallots and other ingredients to potato pulp and mix well.

7Stuff shells with mixture.

8Place potatoes in 9-inch square baking pan and bake at 350° for 15 minutes.
