Bacon-Tomato Cups

  • 8 slices bacon, crisply cooked, or bacon bits
  • 1 medium tomato, seeded
  • 1/2 small onion
  • 3 oz. Swiss cheese, grated
  • 1/2 c. mayonnaise
  • 1 tsp. basil
  • 1 (10 oz.) can refrigerated flaky biscuits (Hungry Jack)

Directions

    Coarsely chop bacon, tomato and onion.

    Grate cheese (3/4 cup).

    Mix all ingredients, except biscuits; set aside.

    Separate each biscuit into 3 thinner biscuits; lay each biscuit over a mini muffin pan cup.

    Press with floured fingers into hole or cup. Fill each cup with bacon mixture.

    Bake for 10 to 12 minutes, or until golden brown.
