Bacon-Tomato Cups

- 8 slices bacon, crisply cooked, or bacon bits
- 1 medium tomato, seeded
- 1/2 small onion
- 3 oz. Swiss cheese, grated
- 1/2 c. mayonnaise
- 1 tsp. basil
- 1 (10 oz.) can refrigerated flaky biscuits (Hungry Jack)
Directions

1Coarsely chop bacon, tomato and onion.

2Grate cheese (3/4 cup).

3Mix all ingredients, except biscuits; set aside.

4Separate each biscuit into 3 thinner biscuits; lay each biscuit over a mini muffin pan cup.

5Press with floured fingers into hole or cup. Fill each cup with bacon mixture.

6Bake for 10 to 12 minutes, or until golden brown.
