Bacon Walnut Muffins

Ingredients
- 2 14 cups flour
- 2 teaspoons baking powder
- 1 teaspoon fresh thyme, snipped or 14 teaspoon dried thyme leaves, crushed
- 18 teaspoon salt
- 2 eggs, beaten
- 1 cup milk
- 12 cup cooking oil
- 6 slices bacon, cooked, drained, and crumbled
- 12 cup walnuts, chopped
Directions

1Grease twelve 2 1/2-inch muffin cups.

2Set muffin cups aside.

3In a medium mixing bowl stir together flour, baking powder, thyme, and salt.

4Make a well in the center of dry mixture.

5In another medium mixing bowl combine eggs, milk, and oil.

6Add all at once to the dry mixture.

7Stir just until moistened (batter should be lumpy).

8Fold in crumbled bacon and walnuts.

9Spoon batter into the prepared muffin cups, filling each almost full.

10Bake in a 400F oven about 20 minutes or until golden.

11Cool in muffin cups on a wire rack for 5 minutes.

12Remove muffins from muffin cups.

13Serve Warm.
