Bacon Wrapped Crab Stuffed Shrimp Brochette

- 1/2 whole Red Bell Pepper, Finely Chopped
- 2 bunches Green Onions, Finely Chopped
- 1/4 cups Saltine Cracker Crumbs
- 1/4 cups Mayonnaise
- 3 ounces, weight Boursin Cheese (garlic And Fine Herb)
- 10 ounces, weight Canned Crab Meat, Picked Over
- 1 pound Extra Large Shrimp (16-22 Per Pound), Peeled Deveined, Tails On
- 12 strips Bacon (maple Works Great!)
- 1 Tablespoon Chili Powder
- 1/2 cups Firmly Packed Brown Sugar
- 6 pieces Wooden Shish-kebab Skewers
Directions

1Soak 6 large wood skewers in water while preparing recipe.

2Preheat the grill to medium.

3In a small bowl combine bell pepper, onion, cracker crumbs, mayonnaise, and Boursin cheese.

4Mix well.

5Gently mix in the canned crab meat.

6Split the shrimp down the middle from the front to the tail (do not cut all the way through).

7Take one piece of bacon and lay it flat on a work surface.

8Place two cut shrimp in the middle of the bacon (leave the tail sticking out to one side of the piece of bacon this is where a good picture comes in handy).

9The shrimp should be laying open, split side up.

10Take a golf ball sized mound of crab mixture and place on top of the shrimp.

11Roll the bacon (start at the top and roll it tightly around the shrimp just barely overlapping all the way to the bottom) this should seal in the stuffing very well.

12Take a big water soaked skewer and drive it through the bacon at the bottom coming thru to the top to secure it in place.

13Place 2 wrapped shrimp per skewer and repeat with remaining shrimp and bacon.

14Combine chili powder and brown sugar on a small plate.

15Sprinkle the mixture onto the bacon.

16Lightly oil your grill grate.

17Heat your grill to medium.

18Grill for 4-8 minutes (turning it over occasionally as it cooks to evenly cook bacon) or until bacon is crispy and shrimp is firm to the touch.

19You may need to move the shrimp to the back of the grill for an additional minute of indirect heating if the bacon starts to get too dark.

20Serve immediately with Bushs Bourbon and Brown Sugar Grillin Beans.
