- 1 2-to-3-pound shad, scaled and cleaned, head and tail intact
- 1 teaspoon freshly ground pepper
- 1 pound double-smoked bacon, sliced
- 1/4 cup white wine
- 1/4 cup fresh lemon juice
- 3 baking potatoes, cut across into 1/2-inch slices
Directions

1Preheat the oven to 300 degrees.

2Season the shad inside and out with the pepper.

3Wrap the fish in bacon until completely covered.

4Place the shad in a baking pan and add the wine, lemon juice and potatoes.

5Cover with foil.

6Bake for 8 to 10 hours, basting every 2 hours.

7Serve with the potatoes and pan juices.
