Ingredients

  • 1 tbsp olive oil
  • 8 slices bacon
  • 1 tbsp white vinegar
  • 4 None eggs
  • 3 None blueberry bagels, split, toasted
  • 3 None savory bagels, split, toasted
  • 1/2 lb cream cheese, to serve
  • 7 oz smoked salmon, sliced, to serve
  • None None baby spinach, to serve
  • None None jam, to serve
  • None None honey, to serve
  • None None lemon wedges, to serve

Directions

    Heat olive oil in a medium frying pan over high heat. Cook bacon for 1-2 mins per side, until crisp and golden. Drain on paper towels.

    Meanwhile, half-fill a deep-frying pan with water. Add vinegar. Bring to a boil then turn down heat. Working with 1 egg at a time, crack eggs into a small bowl then slide into water. Gently poach for 2-3 mins, until egg whites have set.

    Arrange bacon, eggs and bagels on a serving platter. Serve with remaining ingredients.
