Ingredients

  • 2 lb. pinto beans
  • 3 lb. ground beef
  • 2 large onions, chopped
  • 2 garlic buds, minced
  • 1 green pepper, chopped
  • 2 (8 oz.) cans tomato sauce
  • 4 (6 oz.) cans tomato paste
  • 3/4 tsp. red pepper
  • 2 Tbsp. oregano
  • 2 Tbsp. cumin
  • 4 Tbsp. chili powder
  • 2 Tbsp. black pepper
  • salt to taste

Directions

    Soak and cook pinto beans until almost done.

    Brown ground beef; drain fat.

    Add to beans.

    Saute onions, garlic and green pepper until tender.

    Add to beans and meat.

    Add tomato sauce, paste and spices and simmer for at least an hour.

    Stir frequently and add additional water and spices to desired taste and consistency.

    Serve plain or over rice.

    Grated Cheddar cheese and chopped green onion make good toppings.
