- 1/4 c. chopped onion
- 2 (14 1/2 oz.) cans ready-cut tomatoes
- 3 oz. diced green chilies
- 1 c. sliced mushrooms
- 2 2/3 c. pinto or kidney beans
- 1 Tbsp. chili powder
- 1 tsp. cumin
- 8 corn tortillas, cut in 1 inch strips
- 8 oz. shredded low-fat Cheddar cheese
- 1 c. sour cream
Directions

1Saute onion in nonstick skillet.

2Add tomatoes, chilies, mushrooms, beans, chili powder and cumin.

3Simmer 10 minutes.

4Put half tortilla strips down.

5Pour 1/4 tomato mixture and 1/3 cheese over tortillas.

6Repeat layers, ending with sour cream and last 1/4 of tomato mixture. Top with cheese.

7Bake at 350° for 30 minutes.
