Ingredients

  • 10 whole cloves, pressed into 1 whole onion
  • 2 lb. or 5 c. navy beans
  • 1/2 lb. salt pork and 1/2 lb. bacon or 1 lb. bacon, chopped fine
  • 4 cloves garlic
  • 2 large onions
  • 4 sprigs parsley
  • 1 (6 oz.) can tomato paste
  • 2 tsp. salt
  • 2 bay leaves
  • 1 c. molasses
  • 2 tsp. dry mustard
  • 2 c. brown sugar
  • 2 tsp. Worcestershire sauce

Directions

    Rinse beans well; add 1 teaspoon salt and cover with fresh water.

    Add the onion with cloves, tomato paste and parsley; bring to boil.

    Turn low and simmer covered 45 minutes.

    Chop salt pork, bacon, garlic and onion very fine; set aside.

    Mix molasses, mustard, brown sugar and Worcestershire sauce together well.

    Add bacon, garlic and onions.

    Mix everything together.
