Baked Cajun Cabbage

- 1 large cabbage, cut bite size
- 1 c. onion, chopped
- 1 c. celery, chopped
- 1 c. bell pepper, chopped
- 1/2 c. oleo
- 4 Tbsp. flour
- dash of salt
- dash of cayenne pepper
- 1 1/2 c. milk
- 1/2 lb. Cheddar cheese, shredded
- 1/4 c. seasoned bread crumbs
Directions

1Boil cabbage 10 minutes, uncovered, until tender-crisp. Drain.

2Place in casserole. Blend oleo and flour in saucepan over medium heat. Add onion, celery, pepper, salt and cayenne pepper. Saute 10 minutes.

3Add the milk and Cheddar Cheese. Blend well until melted.

4Pour over cabbage. Top with the bread crumbs and bake at 350° for 30 minutes.

5(I use hot Mexican Velveeta cheese.)
