- 1/4 c. yellow cornmeal
- 1/4 c. all-purpose flour
- 1/4 c. grated Parmesan cheese
- 1 tsp. paprika
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 1/8 tsp. ground red pepper
- 1 egg white
- 2 Tbsp. skim milk
- 4 (4 oz.) catfish fillets
- butter flavored cooking spray
- 1/2 tsp. sesame seed
Directions

1Combine first 7 ingredients; set aside.

2Whisk together egg white and milk.

3Dip fillets into milk mixture and dredge in cornmeal mixture.

4Place on a foil lined baking sheet coated with cooking spray.

5Sprinkle fillets with sesame seed and coat each fillet with cooking spray.

6Bake at 350° for 30 minutes or until fish flakes easily when tested with a fork.
