Baked Corn Casserole

Ingredients

  • 1 can cream-style corn (blender can make cream-style corn)
  • 1 can whole kernel corn
  • 1 box Jiffy corn muffin mix
  • 1 small onion, chopped
  • 1 stick oleo, melted
  • 1 c. sour cream
  • 1 Tbsp. green pepper, chopped
  • 2 eggs
  • salt and pepper to taste
  • 10 oz. shredded cheese

Directions

    Mix all in a 2 1/2-quart dish sprayed with Pam.

    Bake at 350° for 1 hour or so, covered with foil.

    (Use a cover, it may run over.)
