Baked Egg and Spinach

- 1 clove Garlic
- 1/2 Tablespoons Extra Virgin Olive Oil
- 5 leaves Frozen Spinach
- 2 Tablespoons Skim Milk
- 1 pinch Nutmeg
- 1 pinch Salt
- 1 whole Egg
- 2 slices Whole Wheat Bread
Directions

1Preheat the oven to 350 degrees F. Oil an individual serving size ramekin.

2Saute the garlic in olive oil over medium heat until lightly brown.

3Add the spinach and cook for 2-3 minutes or until completely defrosted.

4When wilted, spoon the mixture into a colander and press out any liquid.

5Then mix in a bowl with the milk, a good grating of nutmeg, salt and freshly ground black pepper.

6Put the mixture into a single serving sized ramekin.

7Crack the egg into the ramekin, then bake on a tray for about 20 minutes, until the whites are set and yolks are done.

8Meanwhile, toast the bread.
