Baked Eggplant

Ingredients

  • 1 eggplant
  • 1/2 lb. ground beef
  • 1/4 stick margarine
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 c. Italian rice, cooked
  • 1/3 c. seasoned bread crumbs
  • salt and pepper to taste
  • 1 tsp. oregano
  • 1 tsp. parsley
  • 1/3 lb. grated Romano cheese

    Peel eggplant and cut into cubes.

    Cook in boiling salt water. Drain well.

    Mash eggplant down with a fork.

    Brown ground beef in butter with spices, onion and green pepper.

    Stir in eggplant and cooked rice.

    Spoon into lightly greased Pyrex casserole. Sprinkle with bread crumbs and grated Romano cheese.

    Cover and bake at 375° for 20 minutes.
