Ingredients
- 1 eggplant
- 1/2 lb. ground beef
- 1/4 stick margarine
- 1 onion, chopped
- 1 green pepper, chopped
- 2 c. Italian rice, cooked
- 1/3 c. seasoned bread crumbs
- salt and pepper to taste
- 1 tsp. oregano
- 1 tsp. parsley
- 1/3 lb. grated Romano cheese
Directions

1Peel eggplant and cut into cubes.

2Cook in boiling salt water. Drain well.

3Mash eggplant down with a fork.

4Brown ground beef in butter with spices, onion and green pepper.

5Stir in eggplant and cooked rice.

6Spoon into lightly greased Pyrex casserole. Sprinkle with bread crumbs and grated Romano cheese.

7Cover and bake at 375° for 20 minutes.
