- 1 large eggplant, cut into 3/4-inch slices
- 1 egg, beaten
- bread crumbs
- Schilling Salad Supreme seasoning
- Pam
- grated Parmesan cheese
Directions

1Dip sliced eggplant in beaten egg; shake off excess, then shake in bag with bread crumbs.

2Place on Pam-sprayed cookie sheet.

3Sprinkle with salt and pepper and a liberal coating of Salad Supreme.

4Spray tops of eggplant slices with Pam.

5Bake in a 350° oven for 40 minutes.

6Sprinkle slices with grated Parmesan; bake 15 minutes more.
