- 1 medium eggplant, peeled
- 1/2 c. butter
- 1/2 c. cracker crumbs
- 1/2 c. pecans, chopped
- 3 c. light cream
Directions

1Cut eggplant in 1-inch slices.

2Butter a shallow baking dish. Place slices in dish side-by-side.

3Brush tops with melted butter. Sprinkle with crumbs, then pecans.

4Pour in cream and bake 35 to 45 minutes at 325° until tender.
