- 1 eggplant
- small jar Ricotta
- 1 whole egg
- Parmesan cheese
- Prosciutto or ham
- salt and pepper
- fresh basil
Directions

1Slice eggplant thin long ways.

2Saute eggplant 30 to 45 seconds in vegetable oil.

3Let cool.

4Mix Ricotta, basil, salt, pepper and egg together.

5Lay ham on eggplant, then add spoonful of mixture on ham.

6Roll eggplant up.

7Bake in 350° oven until center is hot.

8Use nonstick pan or add water to pan. Add tomato sauce on top to finish.
