- 2 medium eggplant (about 1 1/2 lb. each)
- 1/2 c. chopped onion
- 2 large tomatoes, chopped
- 1 clove garlic, minced
- 1/4 c. Parmesan cheese, grated
Directions

1Dice eggplant and boil in salted water for about 5 minutes. Drain and set aside.
