- 1 small onion, chopped
- 3 cloves garlic, chopped
- 8 oz. spaghetti sauce
- 4 oz. shredded Mozzarella cheese
- cooked meatballs or sausage (optional)

Directions

1Preheat oven to 350°.

2Cut eggplant in half lengthwise.

3Scoop out meat and chop up.

4Set aside shell of eggplant.

5Saute garlic, eggplant meat and onion in pan with a small amount of oil until onion is transparent and soft, over medium heat.
