- 1 eggplant
- butter
- 1 onion, chopped
- 1 egg, beaten
- bread crumbs
Directions

1Cut the eggplant lengthwise and scoop out the pulp with a tablespoon.

2In a saucepan, cook the pulp until tender.

3In a skillet, heat a small amount of butter and fry the sliced onion. In a bowl, mash the cooked eggplant and add the fried onion, egg and enough bread crumbs to thicken.

4Fill the empty eggplant shells with the mixture.

5Sprinkle bread crumbs over the top and dot with butter.

6Bake at 350° for 25 minutes.

7Serves 2.
