Baked Eggs And Cod With Spinach

- 10 oz smoked cod
- 3/4 cup heavy cream
- 2 None green onions, thinly sliced
- 2 oz baby spinach leaves
- 4 None eggs
- 1/2 cup grated Cheddar cheese
- None None Crusty rolls, to serve
Directions

1Preheat the oven to 350°F. Lightly grease four 1-cup ramekins.

2Place cod in a large skillet. Cover with water and bring to a simmer on medium heat. Remove cod from water as soon as the bubbles begin breaking. Peel off skin. Flake fish with fork.

3Mix fish with half the cream, then divide among the ramekins. Top with onion and spinach.

4Pour remaining cream into ramekins and season. Break an egg into each dish. Sprinkle with cheese.

5Bake 12-15 mins, until golden and egg whites are set. Serve with crusty bread.
