- olive oil
- 8 oz. fresh mushrooms, sliced
- 1 (14 oz.) can artichoke hearts, drained and halved
- Eggplant-Tomato Sauce
Directions

1Place fish in 13 x 9-inch baking dish.

2Brush with a little oil.

3Sprinkle with salt, pepper and paprika.

4Bake, uncovered, in 400° oven for 15 minutes.

5Add mushrooms and artichokes; spoon Eggplant-Tomato Sauce over all.

6Cover; return to oven and bake 20 minutes.

7Uncover, bake 5 minutes more.

8Serve with hot cooked rice, if desired.
