Baked Fish A La Mil

Ingredients

  • 2 to 4 lb. fish fillets (whitefish, turbot, grouper or mullet)
  • 4 fresh tomatoes, peeled, seeded and diced
  • 1/4 c. olive oil
  • 1/2 c. white wine
  • 1 Tbsp. fresh basil, chopped
  • 2 Tbsp. parsley, chopped
  • 1 to 2 garlic cloves, chopped fine
  • 1 small onion, sliced fine
  • 1/2 green pepper, sliced fine
  • 1 Tbsp. balsamic vinegar
  • 1 Tbsp. soy sauce
  • 1 c. fresh baked crumbs
  • 1 slice Feta cheese (for each portion of fish)
  • salt and pepper to taste

Directions

    Put fish fillets in baking pan.

    Saute onion, pepper, garlic and tomatoes with olive oil.

    Add basil, parsley, vinegar, soy sauce, wine and bread crumbs to onion and pepper mixture.

    Season to taste.

    Spoon mixture on each fish fillet.

    Bake at 375° until fish is opaque and flakes easily.

    Top fillets with Feta cheese. Broil for 1 to 2 minutes.
