Baked Flounder

  • 4 to 6 flounder fillets
  • 1 c. herbed bread crumbs
  • 1/2 c. diced onion
  • 1/4 c. diced celery
  • salt and pepper to taste
  • 2 Tbsp. butter or margarine
  • 4 to 6 strips bacon, cut in half

Directions

    Mix bread crumbs, onion and celery.

    Salt and pepper to taste. Saute in butter until onion and celery are softened.

    Place dark skinned fillets in foil-lined pan, divide dressing evenly and top with light skinned fillets.

    Place 3 half strips of bacon on top of each.

    Place in oven preheated to 450° for 45 minutes.
