Baked Lasagna

  • 1 lb. lasagna noodles
  • 1 lb. lean ground beef
  • 1 clove garlic or garlic powder
  • 1 tsp. parsley
  • 1/2 tsp. pepper
  • 1 to 2 Tbsp. olive oil
  • 1 minced onion
  • 1/2 tsp. salt
  • 2 (6 oz.) cans tomato paste
  • 2 small cans tomato puree
  • 2 c. water
  • 2 eggs
  • 3/4 lb. Ricotta cheese or regular cottage cheese
  • 3/4 lb. Mozzarella cheese
  • grated Parmesan cheese

Directions

    Brown ground beef in oil with minced onion, garlic and parsley. Add tomato paste, tomato puree, 2 cup water, salt and pepper. Simmer 1 1/2 hours.

    Add lasagna to 6-quarts boiling water and cook according to package directions.

    Drain.

    Mix eggs and cottage cheese together.

    Arrange lasagna in baking dish in layers, alternating with layers of sauce, Mozzarella and cottage cheese. Sprinkle top layer with grated Parmesan cheese.

    Bake at 275° for 20 to 30 minutes.
