- 4 catfish fillets
- 1/2 c. melted oleo
- 1/4 c. diced celery
- 1/2 c. diced carrots
- 1/4 c. chopped green onions
- 1/3 c. lemon juice
- salt and pepper
Directions

1Place fish on foil.

2In skillet, melt oleo and saute celery, carrots and onions.

3Spread over fish.

4Sprinkle with lemon juice, salt and pepper.

5Seal foil well.

6Place on cookie sheet and bake at 350° for 20 or 25 minutes, depending on thickness of fish. Contains 322 calories, 26 grams fat, 14 grams carbohydrates, 106 mg cholesterol and 298 mg sodium.
