Baked Lemon Pudding

- 1 1/2 c. sugar
- 1/2 c. flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 3 eggs, separated
- 2 tsp. grated lemon rind
- 2 Tbsp. melted butter
- 1 1/2 c. milk
- 1/4 c. lemon juice
Directions

1Sift 1 cup sugar with flour, baking powder and salt.

2Beat egg yolks until light, add lemon juice, rind, butter and milk and beat well.

3Stir in flour mixture and beat until smooth.

4Beat egg whites until stiff, adding remaining sugar (1/2 cup), one tablespoon at a time, then fold into mixture. Pour into buttered 2-quart baking dish.

5Set in a pan containing hot water, 1/2 inch deep, and bake at 350° for 45 minutes.

6Chill.

7If desired, spread with whipped cream.
