- 6 boneless chicken breast halves
- 1 (20 ounce) jar salsa
- 1 red bell pepper, chopped
- 2 tablespoons cumin, ground
- 2 tablespoons lemon juice
- 2 tablespoons chili powder
- 3 garlic cloves, crushed
Directions

1Preheat oven to 400 degrees.

2Arrange chicken in a 3 quart casserole or 9 by 13 inch baking dish.

3Combine salsa, red bell pepper, cumin, lemon juice, chili powder and garlic. Pour salsa mixture over the chicken.

4Bake in preheated oven for 1 to 1 and 1/2 hours until chicken is cooked through. Serve with grated cheddar on top if desired.
