- 1 to 2 c. sifted flour
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 3/4 c. sugar
- 1 c. strained persimmon pulp
- 2 eggs, beaten slightly
- 1 c. milk
- 1/2 tsp. grated lemon rind
- 2 Tbsp. butter or margarine
Directions

1Sift together flour, salt, baking soda and sugar.

2Add persimmon pulp to flour mixture along with remaining ingredients. Mix well.

3Turn batter into 8 x 8 x 2-inch baking dish that has been well-greased and floured.

4Bake in moderate oven at 350° for 50 minutes.

5Done when toothpick comes out clean.

6Serve with lemon sauce.
