Baked Pheasant

Ingredients
- 2 pheasants or 4 quail
- seasoned flour
- 3 Tbsp. butter
- 1/2 lb. fresh mushrooms
- 1/3 c. sliced almonds
- 1/2 small onion, chopped
- 1 pt. cream
- 1 Tbsp. salt
- 1 tsp. pepper
- 1 c. dry sherry
- 3 celery stalks, chopped
Directions

1Quarter pheasants or half quail.

2Dip in seasoned flour and brown in butter.

3Set aside.

4Saute mushrooms, almonds, onion and celery in butter.

5Place game in Dutch oven over sauteed mixture. Cover and bake at 350° for 1 1/2 hours.

6Add cream, salt, pepper and sherry.

7Cover and bake an additional 30 minutes or until birds are tender.

8(Can cook in glass dish, just watch closer.)
