Baked Pheasant

- 2 pheasant (about 2 1/2 lb.)
- salt and pepper
- 2 slices bacon, each pheasant
- 1 c. sliced celery
- 1 medium onion, sliced
- 1 Tbsp. chopped parsley
- 1 (6 oz.) can sliced mushrooms
- 1 c. hot water
Directions

1Rub each pheasant with salt and pepper and place in baking dish.

2Place 2 slices bacon over breast of each pheasant.

3Add celery, onion, parsley, mushrooms and hot water.

4Cover and bake in moderate gas oven (350°) for 1 1/2 hours or until tender. Makes 4 servings.
