  • 1 lb. pinto beans
  • 6 c. water
  • 3 Tbsp. brown sugar or molasses
  • 1 can tomatoes and chilies
  • 1 1/2 c. pork or ham trimmings
  • pinch of oregano
  • 1/2 c. chopped onions

Directions

    Fry onions, browning them lightly in fat.

    Place cooked pinto beans in casserole.

    Add onions.

    Brown sugar or molasses, tomatoes and chilies, salt, pepper, oregano and meat.

    Bake covered in a 325° oven for 30 minutes.

    Finish baking without cover to brown.
