Baked Potatoes À La Bolognese

  • 4 None large baking potatoes
  • 1 tbsp olive oil
  • 10.5 oz ground beef
  • 1/4 lb carrots, finely diced
  • 1/4 lb leeks, finely diced
  • 1/4 lb celery, finely diced
  • 1 None onion, finely diced
  • 2 tbsp tomato paste
  • 3/4 cup dry red wine
  • 1 - 15 oz can chopped tomatoes
  • 8 sprigs fresh marjoram, 4 sprigs chopped, 4 sprigs reserved to garnish
  • 1/4 lb Gouda cheese, grated

Directions

    Cook potatoes in boiling, salted water for 25-30 mins.

    For bolognese sauce, heat oil in a large pan and brown ground beef for 2 mins, stirring. Add diced vegetables and cook for 3 mins. Add tomato paste and cook for 1 min. Add red wine and bring to a boil. Add tomatoes, season to taste and add chopped marjoram.

    Preheat oven to 400°F. Drain potatoes, make a cut along the tops and fill with bolognese sauce. Sprinkle with cheese and bake for about 10 mins. Serve garnished with marjoram.
