Baked Pumpkin In Shell

- 1 pumpkin (8 to 10 lb.)
- 1 qt. milk
- 2 c. heavy cream
- 1/2 c. molasses
- 1/4 c. rum (optional)
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
Directions

1Cut top from pumpkin; reserve for lid.

2Scoop out seeds and fiber; discard.

3Combine remaining ingredients in large saucepan; stir over low flame until liquid begins to simmer.

4Place pumpkin on a large sheet of heavy foil in baking pan.

5Pour hot liquid into pumpkin and place lid on top.

6Pull up foil to enclose pumpkin loosely and fold to close openings.

7Bake at 350° for 3 1/2 hours.

8Remove pan from oven and let stand; pumpkin keeps warm 3 to 4 hours, may be served warm or cooled.
