- 1 tablespoon butter
- 1 cup quinoa
- 14 cup brown sugar
- 1 teaspoon cinnamon
- 34 teaspoon ground ginger
- 12 teaspoon salt
- 14 teaspoon ground cloves
- 2 cups soymilk
- 34 cup pumpkin puree
- 12 cup water
- 1 teaspoon vanilla extract
Directions

1In saucepan, melt butter.

2Add quinoa and cook, stirring, for 2-3 minutes.

3Whisk in sugar, cinnamon, ginger, salt, cloves, soy milk, pumpkin, water, and vanilla.

4Pour into prepared 8 inch baking dish and cover with foil.

5Bake at 375 for 35 minutes.

6Remove to a wire rack and remove foil.

7Stir and let stand for 5 minutes.
