  • 1 tablespoon butter
  • 1 cup quinoa
  • 14 cup brown sugar
  • 1 teaspoon cinnamon
  • 34 teaspoon ground ginger
  • 12 teaspoon salt
  • 14 teaspoon ground cloves
  • 2 cups soymilk
  • 34 cup pumpkin puree
  • 12 cup water
  • 1 teaspoon vanilla extract

Directions

    In saucepan, melt butter.

    Add quinoa and cook, stirring, for 2-3 minutes.

    Whisk in sugar, cinnamon, ginger, salt, cloves, soy milk, pumpkin, water, and vanilla.

    Pour into prepared 8 inch baking dish and cover with foil.

    Bake at 375 for 35 minutes.

    Remove to a wire rack and remove foil.

    Stir and let stand for 5 minutes.
