- 1 medium onion, finely chopped
- 1/4 c. margarine
- 1 c. rice
- 1 (20 oz.) can tomatoes
- dash of cayenne pepper
- 1/2 tsp. salt
- 1 1/2 c. grated Cheddar cheese
Directions

1Saute onion in margarine in skillet.

2Add remaining ingredients, except 1/2 cup cheese, with 1 cup boiling water; mix well.

3Pour into greased 2-quart casserole.

4Cover; bake at 350° for 30 minutes.

5Stir well; sprinkle with remaining cheese.

6Bake, uncovered, 45 minutes longer.
