Baked Scallops

  • 2 lb. sea scallops
  • 1 1/2 sticks butter
  • 1/2 c. shallots chopped (green onions or scallions are good too)
  • 1/2 lb. lobster meat (small shrimp can be used)
  • 1 c. bread crumbs or 1 cup crushed or Ritz crackers
  • 2 pkg. whole leaf spinach
